Ingredients
- Peanut Oil (1 Tablespoon)
- Red Onion (medium) diced
- Garlic (4 cloves) minced
- Black Beans (30 oz) (2 cans)
- Water (1 cup)
- Salt (1 teaspoon)
- Cumin (1 teaspoon)
- Chipotle Powder (1 teaspoon)
- Fresh Cilantro Chopped (3 Tablespoons)
- Lime Juice (3 Tablespoons)
Instructions
- Add oil and onions to sauce pan
- Lightly salt
- Cook for 5 minutes over medium high heat
- Rinse and drain black beans, then add to pot
- Add remaining increments (except Cilantro and Lime Juice)
- Cook for 10-15 minutes, until thick
- Top with cilantro and lime and serve
