Ingredients
- 1.25 lbs thin sliced chicken breasts
- eggs (3) beaten in prep bowl
- flour (3/4 cup in 1/2 sheet baking pan for prep)
- coating in 1 second /2 sheet baking pan for prep
- breadcrumbs (1 cup)
- chipotle powder (1 tsp)
- cayenne pepper (3/4 tsp)
- salt & pepper to taste
- marinara sauce
- shredded mozzarella cheese
Instructions
- Put pasta water on the stove to boil
- Coat chicken in flour, then egg, the breadcrumb mixture
- cook on med-high (6-7 on electric stove) in 12″ saute pan (it will take 2 to 3 rounds, when starting final round put pasta in water)
- 3 min on first side
- flip
- 2 min on second side
- check temp for at least 160° F
- Spoon marinara sauce on (almost covering)
- Add shredded mozzarella cheese
- Broil on high until cheese browns/bubbles (~ 2-3 minutes)
- Serve with pasta and red sauce
