Ingredients
- Beef Chuck Roast (or Flank Steak) 2.5 lbs
- Peanut Oil tablespoon
- Garlic Gloves (6)
- Tomato Sauce (16 oz)
- Green pepper – sliced thinly
- Onion – sliced thinly
- Green Chillies (4oz can)
- Tomato paste (2 tablespoons)
- Oregano (2 teaspoons)
- Cumin (1 tablespoon)
- White vinegar (1 tablespoon)
- Red pepper flakes (1/2 teaspoon)
- Fresh cilantro (1/4 cup chopped)
Instructions
Prep the Meat
- Cut three Xs in the meat and insert a glove of garlic in each
- Add salt and pepper to both sides of the meat
- Put tablespoon of peanut oil in pot and heat
- Fry beef for 5 minutes on each side (make certain exterior is browned), do NOT cover the pot
For the Crock-pot
- Put the meat in the crock
- Add 3 cloves of garlic (chopped)
- Add all other ingredients
- Cook on low for 7-9 hours
- Shred beef with two forks before serving
