Ingredients
- garlic clove minced
- olive oil (2 tbsp)
- onion (1/2 chopped)
- pepperoni (1/4 lb) chopped
- small white beans (1 can, 15oz) (or navy beans)
- petite diced tomatoes (1 can, 15oz)
- tomato sauce (1 can, 15oz)
- dried basil (1 tsp)
- dried oregano (1/2 tsp)
- cayenne pepper seasoning (1 dash)
- dried penne pasta (lb)
- fresh parsley (1/2 cup)
- grated parmesan cheese
Instructions
- saute onion, garlic, pepperoni
- add chopped tomatoes, tomato sauce, basil, oregano, cayenne pepper, salt & pepper to taste
- simmer 5 minutes
- add beans and parsley
- simmer partially covered 5-7 minutes
- cook pasta separately, drain
- toss pasta and sauce together
- sprinkle with parmesan
