Ingredients
- quinoa (1 cup uncooked)
- chickpeas (15 oz can)
- cucumber (seeded and chopped)
- red bell pepper (seeded and chopped)
- red onion diced (3/4 cup)
- flat-leaf parsley (1 cup chopped)
- olive oil (1/4 cup)
- lemon juice (1/4 cup)
- red wine vinegar (1 tablespoon)
- garlic (2 cloves minced)
- salt (1/2 teaspoon)
- black pepper to taste
Instructions
- Cook the quinoa in salted water and allow to cool
- Add to a large bowl combine
- cucumber
- red bell pepper
- red onion
- parsley
- chickpeas
- In a small bowl combine and blend
- olive oil
- lemon juice
- red wine vinegar
- garlic
- salt
- Combine everything in the large bowl
