Ingredients
- red onion (1)
- red pepper (2)
- zucchini (2-4)
- eggplant (2 small Italian or 1 large)
- tortillas
- hummus
- baby spinach
Instructions
- Put all vegetables on a baking pan except except spinach
- Drizzle with olive oil (eggplant needs less olive oil than others)
- Salt & Pepper
- Roast at 450 degrees for 20 minutes
- Stir
- Roast at 450 degrees for another 20 minutes
- Serve on tortillas with hummus, quinoa, and baby spinach
