Ingredients
- Chicken Breast (1.5 lbs)
- Diced Tomatoes can (14 oz)
- Black Beans can (15 oz)
- Frozen Corn (1.5 cups)
- Fresh cilantro chopped (1/4 cup)
- Chicken broth (14 oz)
- Scallions chopped (3)
- Garlic powder (1 tsp)
- Onion powder (1 tsp)
- Cumin (1 tsp)
- Cayenne pepper (1 tsp, adjust to taste)
- Salt (to taste)
Instructions
- Combine all ingredients (except chicken) in crock-pot
- Lay raw chicken breast on top
- Season chicken with salt
- Cook on high for 5.5 hours
- Remove chicken and shred
- Return chicken to crock-pot and stir in
- Cook 30 minutes
