Ingredients
- 2lb Shrimp 24-28 ct / lb (peeled & deveined)
- 2 cans black beans (rinsed & drained)
- 8oz can of crushed pineapples with juice (not syrup)
- 1/4 cup mango/peach preserves
- Chipotle Powder, Salt, & Pepper
Instructions
- Season shrimp with chipotle powder, salt, & pepper
- Combine black beans, pineapple, & preserves and simmer gently until warm
- Saute shrimp in olive oil until done
