Ingredients
- chicken stock (8 cups) (or water & low sodium Better than Bouillon)
- small meatballs (3/4 lb)
- frozen spinach
- onion chopped (1 cup ~ 1/2 onion)
- carrot chopped (2 medium carrots)
- celery chopped (2 stalks)
- chicken cooked & shredded (2 cups ~ 2 breasts) (rotisserie chicken works well)
- bay leaves (2)
- garlic powder (2 tsp)
- black pepper (1/2 tsp)
- pasta (acini de pepe) (1/2 cup)
Instructions
- Combine all ingredients (except pasta) in a large stock pot
- Bring to a boil
- Simmer 15 minutes
- Add spinach & pasta
- Cook additional 11 minutes
